URGENT Recipe Critique Needed

    So I have decided on something different for tomorrows brew.

    40% Pilsner
    40% Wheat
    20% Sugar

    OG=1.090-1.100
    Mash at 149,

    2 wyeast smack packs 3787

    EKG hops to bitter for 30-40 IBU

    Some EKG 1t 15 mintues, may also use orange peel and coriander.

    I know its little odd, but i like wheat beer, I like big beers and i like belgians. I also like my beers dry.

    What do people think about it? Has anyone done anything similar? Does anyone have any suggestions?

    Could be good without the orange peel and coriander. I would personally cut the sugar back to 10%

    Yea its a little odd. Lots of sugar. But if that's how you want it then go ahead. I would personally cut the sugar back to 10%

    I would make a one gallon starter or use 3 packs of yeast.

    Are those percentages by weight or by original gravity contribution? If by weight, that's a pretty significant amount of sugar. For example, let's say 37 PPG for the grains, and 75% mash efficiency. The sugar is 46 PPG, and not subject to mash efficiency. Sort of a unitless calculation without actual weights, but ...

    .40 x 37 x .75 = 11.1 Pils Gravity
    .40 x 37 x .75 = 11.1 Wheat Gravity
    .2 x 46 = 9.2 Sugar Gravity

    Total Gravity = 11.1 + 11.1 + 9.2 = 31.4
    9.2 Sugar / 31.4 Total = ~29% Gravity from Sugar.

    I would personally use less sugar. vikeman's post is illuminating. I wouldn't have immediately thought of it that way, but now I have a new angle for future considerations.

    I like the orange peel idea. Coriander I'm neutral if you go sparingly, but it could easily be ditched IMO.

    don't let yourself be talked completely off your idea. consider the suggestions, and either alter your recipe accordingly, or don't. but the next new sensation is never discovered by following someone else's recipe. and worst case scenarios on a five gallon batch of beer just aren't all that cataclysmic and don't have a whole lot of effect on the chances of the sun rising again tomorrow.

    Any Belgian wheat I've ever brewed didn't have any of the fruity esters and phenolics you'd pick up from Wyeast 3787.

    Then again we tend to brew what we like to drink.
