I will complain about them, of course still drink them, but then complain about them.

Yeah, my girlfriend read somewhere that hoppy beer is good for your hair. The hoppier the beer, the more it shines. So there are some 2 year+ old bottles of IPA sitting on the floor of our bathroom.

Drink them, and imagine yourself in the shoes of a British colonial governor in India, and pride your palate on how delicious it is after having made the trip all the way around Africa, and all the way to your glass.

    Make beer gravy...

Recipe is flexible but here's the base for it....

    22 ounce pale or ipa
1/3 cup nutritional flake yeast (the yellow stuff you can buy at health food stores or yuppy whole foods markets)
dredge cubes of butter in all purpose flour, this is going to make a thin roux.

Add a dash of fresh savor herbs anything you like, salt pepper to taste. Let simmer until slightly reduced in a sauce pan, make sure you adjust the roux base until you get the desired thickness. It's a personal preference.

You could also add a dash of mustard to the sauce. Plate it over meat or mashed potatoes.

Drink em and enjoy em. This is way over done IMO.

Beer spritzer. Hear me out: I recently found a great deal on Victory Hop Ranch with about 2.5 months on it, but the bright hoppiness had faded far too much for my tastes. After drinking a few as is, I found the best thing to do was mix a 12oz pour with about 4oz of seltzer water, and a few dashes of both hopped grapefruit bitters and citrus bitters.

What was a subpar oldish DIPA turned into a passable APA with some nice citrus notes that drank nicely with dinner.

me and @cirtap just round up all our old IPAs and a giant pitcher and have an IPA cuvee. sometimes it works, sometimes it doesn't, but its a fun experiment. i recommend giving it a shot at your next big tasting.

Just don't bring them to a boil, as they are still rather bitter the hop flavor has just fallen off. You will end up having an overly bitter gravy.

You could turn a few into salad dressings, Oil, IPA, OJ/Pineapple Juice, S&P, Herbs, Wisk to emulsify dress salad.
or Use the marinade a meaty fish like Halibut before grilling or pork or chicken.

Drink it, or use it in cooking. Beer batter fish is amped up with an old IPA.

The best solution to IPAs in your fridge getting old is to not be a ***** and drink them before they get old
