Using orange peel.

    How much sweet and/or bitter orange peel do you guys use for wheat beers? I want a fairly defined orange character in my beer.

    I have used 0.5 - 1.0 ounces of orange zest for 5 gallon batches. One average size orange yields about 0.5 ounce. If you go over 1 ounce you will be pushing the limit most people use. Also, I have had bad experiences with de-hydrated orange peel . . . go fresh. It is possible to "dry spice" your brew with orange peel (I used a tea ball) if you want to perk it up. I did this when my de-hydrated peel failed me.

    Try Amarillo hops.
