Using Super Light LME for a Saison.

    Thanks for that. I got given a bottle of Saison Dupont from my sister inlaw when she came back from Brugges. Since I can't get that beer here I want to save the yeast I harvested.

    Now if I could only get my hands on some Orval....

    Four days after adding the Dupont starter this has dropped to 1010 and the airlock is still bubbling every two seconds. So far I have kept the wort temp at a steady 25 deg celcius (77 deg F). OG was 1043.

    Down to 1007 and still active.

    I have a mix of DuPont/Blaugies in my Saison-Rye, started in the upper 70s, then let rise to mid 80s. After eight days it reads 1.004.

    Bottled 10 litres of this tonight. F.G. 1007. The other 10 litres was racked onto 600 grams frozen raspberries ala @VikeMan's poor man's sour raspberry grisette.

    Thanks to those that helped with advice.

    I've never brewed a saison but isn't that a little fast? I thought they were a slower style. Looks good though.

    2.5 weeks in the primary. It was done at FG 1007.

    3 days in the bottle. Well I had to crack one open to try.

    I put half the batch onto raspberries and will bottle after a week.
