Val Dieu Yeast

    Anyone know what yeast is used at this brewery? I am going to try to culture some dregs but wanted to make sure it wasn't already available.

    My googling came up with nothing. Also does anyone know if I can get the date from the bottle? I don't see one anywhere.

    Well,the cork on the bottle has 12/2014. Assuming this must be a best before date. Not a good sign. The beer does not have the same wonderful aroma as the one I had on tap that led me to want to culture the yeast. I'm already boiling the starter wort so I guess I'm gonna go ahead with it anyway.

    12/14 is still 3 months from now, so as long as it has been handled carefully, it should be o.k., especially as you indicate you are making a starter.

    The starter should give you a good idea how vigorous the yeast is, and you can always step up the starter if you think you need to do so once it's growing.

    It's probably just been sitting on the shelf for years. The store I got it from does not have good turnover on account of having way too much beer on hand. I think she'll be fine! I'll report back.

    No go on the yeast. I had it in a mason jar covered with tin foil and I ended up finding a fruit fly in it so I chucked it. It smelled like crap anyways. I gotta try to find some fresher bottles.
