Vanilla Pale Ale Critique

    I am going to brew a 5 gallon pale ale batch. After primary fermentation I am going to age one gallon on vanilla beans. One gallon will get pure vanilla extract at bottling time. The remaining three will just be bottled as a pale ale.

    Going for a toasty, earthy pale ale with not a lot of sweetness (until i add the vanilla in).

    Grains:
    6 lbs of Light Dry Extract
    2 lbs of 2-row
    .75 lbs Crystal 40
    .75 lbs Aromatic Malt
    .5 lbs Carapils
    .25 lbs Biscuit

    Hops:
    .3 oz Chinook (13%) at 60
    .5 oz Glacier (5.6%) at 60
    .5 oz Nugget (13%) at 25
    1 oz Nugget (13%) at 5

    Yeast:
    American Ale II Wyeast 1272

    Any thoughts on how much vanilla extract to use for one gallon at bottling time?

    Maybe 1/2 an ounce for a gallon of pale ale. There won't be any sweetness from vanilla extract though.

    Odd that you're using 2-row and DME. if you're mashing anyhow, why not do all grain?
