Also, if this stuff isn't sitting in a temperature controlled room or walk-in cooler, you're going to have to factor in how much you intend to spend (and power) some sort of restaurant-grade refrigeration unit. Even if it's just an old True soda fridge, you're going to have to buy it (or lease it) and then plug it into the wall.

If you can do all of that for $5 on top of the price of the beer, and show that to the bar owner as a money-maker, I owe you a drink.

Just because there can be a cost associated with it, doesn't necessarily mean there is. It depends on the situation. I get that in general, space=money, but what I dispute is that the cellared beer is taking up an appreciable amount of space such that a bar is losing money by storing it.

In the example you give, if the cellared beer is not what is preventing me from receiving and selling a second pallet of PBR, and it likely isn't given that the PBR is almost certainly stored in the cold box, and it isn't taking up space that I could fill with a product I could sell above and beyond what I'm currently selling, the opportunity cost of cellaring the beer is $0. And this is all assuming the cellared beer is stored on-site at the bar. I would think that unless it is being offered for sale, and particularly if it something scarce like Cantillon, it may even be stored at the owner's home.

Trust me I cannot stand when bars over price their product and it is something I am trying to fight against with my bar. We have a bar not 5 miles away that sells Petrus Pale 12oz bottles at $16.00 a pop...

I'd just like to set up vertical tastings and we may a loyalty/membership program and I would love to be able to offer special beers to our regulars from this cellar. I just wanted to make sure that a slight markup increase is not frowned upon.

Some of the prices you guys have linked make me sick. People worried too much about a bar cost percentage and not their customers.

That's a weird point you made. Fruet was roughly $35 retail, so $60 isn't a huge jump. Bolt Cutter, retail was all over the map but it averaged $20, so that's triple the price of it. By the bar's thinking, Fruet should be $105, but it's not. Fruet is also, IMO, a far superior beer than Bolt Cutter ever could be. Would I pay $60 for either one? No, but I'd be more willing to pay it for the Fruet. Someone like me with more money would do it.

9$ for 2009 Dogfish Head Palo Santo Marron
    7$ for 2007 Brooklyn Monster

i found this to be very reasonable if not a steal

One of the store I like to hit up holds bottles back to sell at a future day all the time. Barleywines, gueze, wild ales, etc. The nice thing though is that the pries are usually the same as when they were first put up. No mark up. It's things like that that keep me coming back.

Speaking of which, a place I'm visiting soon has bottles of 2010 Black Tuesday for $110 a bottle. Yay or nay? Curious to hear your feedback.

    It's good, it isn't a $110 worth of good.

For that price? If only it was a 1929 Black Tuesday...

Is it even legit to be selling it? That seems awfully grey market to me unless the place is in DC.

I'd pay that in a second for the opportunity to try it, but that doesn't mean it would be worth the money.

Certain places get a few cases but its pretty limited and normally relegated to events.
