Spoil? What do you plan on doing with it? Short of popping all the tops and leaving it out on the counter for a few weeks, or placing the bottles on the dash of a black 1974 Dodge Aspen with dark gray vinyl interior and parking it in Death Valley from equinox to equinox, I don't think spoilage will be a concern that you would have to deal with. Hops degradation might be a factor a few months down the line, but it will only be subtle at that point. This is a high ABV, aggressively hopped TIPA that will slowly mellow over the next few seasons.
I would like myself know if or h8w this ages? Granted i only have a little over a 6pk and plan 4o drink the shit out of this beer,i will wait atleast 5 more wems before i dranl most of it
This is the first time that Waldo was released in bottles, so nobody would really know. What's your goal for aging this? Just because it's >10% abv doesn't mean it belongs in the cellar. But by all means give it a shot and let us know what happens.
The beer itself won't spoil but the your drinking enjoyment of it sure can be by cellaring it. Waldo is an imperial IPA which is a style that is best consumed fresh.
Just wanted to revive this thread to say this beer is amazing. I would never cellar it. 11 more to go!
