warrior hop profile

    Made my first beer with warrior hops and getting a lot of bubblegum notes in the nose and taste. Is that common with warrior hops. Bought them for the high acid but did not expect bubblegum nose and taste.

    FYI was brewing an IPA and ended up with more of an imperial red ale

    Just for clarification, did you use Warrior for flavor and aroma?

    I have only used Warrior as a bittering hop.

    Never had bubblegum from it. Could your fermentation have got a bit warm, and what yeast was it?

    I've used a fair amount of warrior and it usually gives off a faint citrus and slightly resinous character, with fairly clean bitterness.

    Us 05 yeast.
    Still very oily but very big notes of bubblegum. Warm fermentation not an issue as fermented during Australian winter. Top temps was mid 70's in daytime. 40-50 at night.
    Did a partial with crystal malt and an extract. Not bad but not what expected at all

    No way to say for sure if it caused those flavors, but you gotta get those temperature swings under control. Do you use a swamp cooler/fermentation chamber?

    “Top temps was mid 70's in daytime. 40-50 at night.” I am assuming that those temperatures are ambient. Do you know the temperature of the wort/beer? Do you have a fermometer on your bucket/carboy?

    As I posted before I have only used Warrior hops for bittering. In the book For the Love of Hops by Stan Hieronymus (I highly recommend this book) it states:

    “Warrior emerged from the crosses that produced Simcoe, and likewise open pollinated. Used primarily for bittering but has interesting aroma/flavor attributes: floral, spicy, woody and sweet citrus.”

    It would seem that any bubblegum flavors would be from something other than the hops?

    Did you use a crystal 120-140L for about 8-10 %, if this is the case the bubble gum flavor could come from these malts, you will need to age this beer a bit longer but you will be fine.

    Daytime highs in the mid 70s F? Well, add around 8 degrees to that due to the heat fermentation generates and you are beyond danger close to fuckmefunkyhotyeastweirdness city. Couple that with a 20 degree swing downunder (sorry) and I think we may have found your culprit. Pure speculation of course.
