So next week I am planning on using some washed ECY Bug County to brew a sour golden ale with an OG around 1.060. I washed the yeast on January 11th and it has been sitting in the fridge since then. I have two pint sized mason jars with a little more than 1/4 inch of yeast on the bottom. My question is should I make a starter or just pitch both jars?

If you think I should make a starter I am wondering if I should oxygenate it? Would you use 1 or 2 jars of the yeast in the starter? How long should I let the starter sit before cold crashing? I know the answers to these questions if I was using standard yeast but am wondering if the procedure should change since it is Bug County. Thanks in advance for the help.

I dont like oxygenating anything that I pitch souring bugs into.

I'd just pitch the contents of a jar with a primary sacc yeast (something cheap and not too attenuative).

Do you mean bacteria specifically (not wild yeast)?

Yes, any culture with bacteria. Brett I am fine with giving some oxygen.

I went right to the source and the suggestion is since I have two jars of yeast make two starters. Oxygenate one starter and don't oxygenate the other and pitch both. Makes a lot of sense. Al is the shit.
