    The main problem with sending off for a single test at a lab is that it is just a snapshot of your water as water sources are frequently mixed or change with rainfall etc (depending where you are) so it may well not be accurate for any given brew day. I'm lucky in that my water barely changes at all but I know some brewers down south who have greatly variable water. So that's why being able to test for yourself, for alkalinity at least is handy for a lot of brewers. It's easy to do and supposed to be accurate enough for our purposes
