I cannot figure out what is going on with my last two beers. Maybe it is nothing, I don't know...Anyway, the last two beers I brewed have had a different looking fermentation than what I am used to seeing. I have brewed about 40 all grain batches over the last two years, but I just changed my process two beers ago. I will try to be brief, so I am only going to highlight the differences in my brewing techniques below. Please note that I always make Mr Malty size starters for every beer. The reason I changed my technique is irrelevant. I will be going back to my old technique in a couple of months. In the past: 1. Put hops in a muslin bag. 2. After boil, run wort through a therminator and into my fermenter at 64 degrees (my pitching temp). After vigorous fermentation started, ALL the little particles in my fermenter would swirl around and around. Most everything on the bottom of the fermenter would join in. The last two beers: 1. Put hops directly into wort WITHOUT a muslin bag. 2. After the wort is chilled with wort chiller, ALL the wort is siphoned to fermenter at 64 degrees. I highlight the word all, because even the hops and the break get siphoned over. After vigorous fermentation starts, nothing swirls around and around. I mean, the beer is swirling, but all of the break and hops are left on the bottom of the fermenter. The first time this happened, I just thought it was because of the yeast. For it to happen twice though, I am pretty sure it is because my technique changed. I am sure there is no difference in the final flavor of the beer. I just want to know why this is happening, and if it matters. Thanks.
It would seem to me that it's just the extra hop trub. Keeping them in muslin, you're pulling out most of the solid particles. The beer swirls because convection always occurs during fermentation, but its not going to be vigorous enough to pick up all the extra, heavier hop particles and whatnot that you have without the bag. Not going to harm the finished product, a tiny bit of extra bitterness might show up because of the extra hop crud in the fermenter. I wouldn't think that small a difference would be noticeable though.
