Weird white "lard" in boil?

    So I brewed a 75% Pils 25% flaked wheat beer last weekend. It was my first time using that much pils, ever using flaked wheat, and first time using a protien rest in my mash. As soon as the boil started I started to get some white lard type stuff floating to the top, I simply scooped it up and dumped it, but I was not sure what was causing it since I have never seen anything like it, but was using all new ingredients and techniques for this beer. Has anyone else ran into this?

    Proteins from the flaked wheat. It's completely normal.

    Would this had happenend without a protien rest?

    I've actually never used flaked wheat myself, but I get the same thing when using flaked oats and have never done a protein rest. I heard somewhere (Brewing Classic Styles, maybe?) that a 90 minute mash will convert oats without a protein rest, so I've never done one.

    Did you use more lard than usual?
