    Very cool idea. Thanks for sharing. I may definitely try this soon as well.

    Just did a Triple Tripel side by side competition last week with Unibrouwe's La Fin Du Monde vs. Westmalle Tripel vs. SN Ovila Tripel. La Fin won the battle but Westmalle is still a great beer. Ovila came in a distant 3rd.

    Westmalle Dubbel is best relatively fresh. I bought 12 bottles of dubbel that were around 4-6 months old, and I still have three bottles. Now they are almost 2 years old, and they haven't improved. Both of the Westmalle's have a fantastic hop profile that is best under one year.

    I personally prefer Westmalle to La Fin Du Monde, but the latter is certainly a lovely beer. I agree that Ovila is a distant third (for a US-made Tripel, I haven't found a more authentic-tasting brew than Allagash's venerable Tripel).

    I absolutely agree. The Tripel is delicious with up to a year on it; there isn't any loss of hop character or flavor. I haven't aged the Dubbel before, but it doesn't seem to have done it any favors. The yeast seems to have completely taken over, and it starts to lose out on the sweetness, giving way to a dry spiciness that isn't characteristic of a fresh Westmalle.

    If I'm not mistaken that was a 750ml×2 black & tan—and you appear to have lived to tell the tale.

    I love this post. Excellent experimentation.

    Much like Rouger, Westmalle Tripel is likely one of my 10 favorite beers and to me THE tripel. The Dubbel is excellent, but not quite up there with the tripel, nor with Westy 8 or probably even Chimay.

    I love beer experimentation. Just last week I added a tablespoon of hazelnut creamer to a pint of Surly Coffee Bender and lived to tell the tale.

    Cool idea. Seems the idea could be replicated for a number of Belgian breweries.
