Westvleteren 8 & 12 Cellaring

    I have 3 cases of the beer and my new home’s cellar ranges from 15 c. to 21 c. temp over course of year. Will this damage beer? I keep them covered and bottles always feel cool even now in summer. In fact it doesn’t feel this warm in cellar near cement floor and wall, but gauge reads 21. Any advice much appreciated. Thanks.

    Cellaring doesn’t make beer go bad or stay good, it changes beer. Sometimes for the better, sometimes for the worse. Sometimes this is universal, but usually this is personal preference. Colder temperatures results in beers changing slower. How much slower at that temp range compared to, maybe 8-10 C being ideal? Mostly no one knows, but some testing years ago by a BA suggests not a ton, especially for the 12. The 8 will definitely change faster. Also, all this depends if we are talking over the next 3ish years or like 10. Anything under 5 I wouldn’t worry much about.

    Now if the question was 5c compared to 21C, that would be a bit faster. Especially if over 5 years.

    Many thanks for the help. I hadn’t planned on more than 2 years for the 12. I guess this is more of a storage question. Again, thanks.

    As already posted, lower temperatures and smaller temperature fluctuations are to be preferred.
    But well, the range of 16 to 21¨° C is certainly okay.
    Bubble wrap is a good isolator. Cover your crates and bottles with it and it will certainly create some isolation.

    You are totally fine. I have aged Belgian ales like this in a variety of conditions over several years and there are minimal differences. If you were aging these for 15 years, then I would be more concerned. You will enjoy them!
