    Continuing with the hazy day beer today is 8- Bit Brewing -Size Matters Not .This is a galaxy hopped NEIPA style CO 04/30 , it is tropical dank with citrus and melon, very tasty .

    Be careful with that because spider bites can lead to MRSA. I actually got bitten years ago and the doctor freaked out. He took the scalpel and dug the bite out. Then I went on intravenous antibiotics. I think that alone cost me 500 bucks

    My doc has been bugging me for a number of years to get the shingles vaccine. I probably should.

    Kidney stones are no fun but you don’t have to be an old fart like you and me to get them.

    Not sure if you saw my posts on Sunday but I finally had oysters. First time since my wife passed away in April.

    My wife and I decided to tag team dinner since we are both recovering from dang rona virus. Dinner is fresh spaghetti, with meat sauce and cheddar biscuits. Beer of choice for my son and me is Little Lush NEIPA bu Frost Beer Works.

    Here's the basic recipe I use for the angel hair with roasted onions/peppers:


    Roasted peppers:

    - Preheat oven to 425 degrees F

    - Slice a couple of peppers of choice into strips about 1/2" by 1" - I used red and orange
    bell peppers. You can use more if you'd like. Sometimes I also add sliced jalapenos to the mix

    - Slice a large bermuda or sweet onion into 1/2" wedges

    - Toss all the peppers into a bowl and drizzle with a generous amount of olive oil. Toss with
    your hand to mix.

    - Add a tsp of oregano to the peppers and some red pepper flakes to taste. Mix again with
    your hand to coat all the pieces.

    NOTE: sometimes I add a tsp of Zahtar (Zataar) to the mix as well - that's optional, but it
    does add a nice subtle flavor

    - Dump them out in a single layer on a large baking sheet - I line it with parchment paper for
    easy cleanup and to keep them from sticking.

    - Bake for 25 minutes - I like them to get a little char on them.

    - Remove from the oven and let cool for a few moments - two peppers and one onion
    makes enough for two meals for me.

    -

    For the pasta:

    - Cook some angel hair of your choice to whatever state of tenderness you like. Personally,
    I like Delallo angel hair if you can find it.

    - while waiting for the water to boil, heat a large skillet over low heat with a couple tablespoons
    of olive oil. Add the amount of roasted peppers you want to use and then add a couple
    of tablespoons of chopped garlic, or to taste.

    I personally like using Boticelli minced garlic, but you can use fresh, or whatever you prefer.
    I find that the minced garlic is not as overwhelming as using fresh garlic. Keep an eye on
    the skillet because you don't want the garlic to burn.

    - Drain the pasta and then add it to the skillet and toss it with the peppers and oil to coat it
    and blend everything. Drizzle a bit of chili oil over it if you'd like.

    - Serve and enjoy.

    Yikes! Had my gallbladder removed but there was not a lot of pain.
