    @cavedave If you can make the Dusseldorf Altbier then you are skillful indeed. I am tasting it now and writing my review. Heaven. It held up fine. There was a pop when the seal was loosed on the bottle. The only thing was I am sure the head should have lasted a bit longer. On their website this brewer defines their committment to the purtiy laws of 1516 in way that reminds me of our newfound entusiasm for organic farming. They say that the character of beer begins in the field with the grain. They call the purity laws "sustainable." They are poetic and passionate about the beer. They consider beer the culmination of the earth and man as they come together in the vision they have concerning their brewing. Their words are filled with passion and poetry even in translation. I have not tasted anything like it and it's wonderful .

    That is supposed to be a picture of the smoke in case that has significance concerning freshness.

    I get the feeling that the only wear and tear on this beer was the fact that the head seemed to want to be bigger and creamier and last just a bit longer.

    Alts are some of the most underrated, poorly known, and interesting to brew beers there are. It is top fermented but lagered for a long time, using a single, double, or triple decoction mash, and fermented with Kolsch or German Ale yeast. Complex malt bill just adds to the fun. I split the mash last one I did, no decoction, but did half higher temp, half lower temp., and it came out dreamy. If you are ever down Ulster County way I would be happy to share one with you.:slight_smile:
