I agree, I love the note fennel adds to sausage. Gives it more depth of flavor IMHO.

When I moved to the Fort Erie-Buffalo area many moons ago, pizza came with pepperoni… without asking for it. That’s just how pizza was. Decades later perhaps that has changed, @TCgenny and @micada?

    Fat Head's Brewery -- Oktoberfest
    Bavarian-style festbier
    ABV 5%; pouring temperature; 43.9 ℉; canning info: 07/10/25

Auxiliary vices: Omar Ortez -- Robusto Maduro (5x54); splash of medicinal Wild Turkey 101

Yellow hued body, mild cloudiness; thick carbonation; thick and long-lasting head, white; fairly dense and sticky with a rolling, sculpted appearance. Very attractive scent; delicate malt base with pome fruit esters; notes of cracker and biscuit. Not much malt-forward flavors; more citrus zestiness; a bit of bread dough near the finish along with a peppery spiciness. Medium body; overall gentle raspy feel to it; crisp.

Being declared a Bavarian-style festbier, I would have expected a deeper malt presence. This particular beer emphasizes herbal and spicy hop notes and the mouthfeel just isn't quite as smooth as I would expect from a lager. It's a good beer, but wouldn't be my first choice for a festbier.

...I like a good pepperoni, mushroom, onion, and green pepper pizza...other meats are always welcome like sausage, ham, or chicken...don't care for olives, little fishies, and such...one of the best pizzas I ever had came from a little Italian family owned place in Cascade, MD (outside of Ft. Ritchie)...Sicilian style, packed with ingredients, great cheese...I don't know if the place is still doing business since Ft. Ritchie shut down a while back...

...and now that I make our own pizzas, I can put how much of whatever I want on my pie, make a more vegetarian-oriented one for Mrs. BeerGoot...

I think you're right, overall, that pepperoni is more popular nationwide as a topping. Perhaps the love of sausage and other exotic other meats (n'duja, anyone?) in the Chicagoland region is that it was THE place for meat-packing for a long time, and thus the range of "other meat products" that rose to prominence allowed for fenneled sausage to survive for longer. And yeah, I love the fennel in the sausage, just as I enjoyed other cuts used as toppings in the city. Can't wait to revisit and gain another few pounds down the road. Cheers, Jason!

Hidden Hand Neverbright: Fresh Hop Black IPA (Citra, HBC 472, Centennial, and Simcoe fresh hops). Love the balance of hop character and dark malts. The malts offer some roast, some coffee bean, and slight cocoa powder, but the bright tangerine, floral, grapefruit, slight dank, and big resinous pine still are the show. If all Black IPA's were like this one, I'd drink more of them. Fantastic stuff.

Cheers to Tim @SawDog505! A vacay before starting a new job is always a good thing!

Da Boss and i went out to a local trail off the Blue Ridge Parkway just east of Asheville this morning. The area was hit pretty hard by Helene. The trail is pristine now compared to March, but the landscape will be forever scarred.
Enjoying a nice DIPA from the Beer Lord of Lehigh Valley @jzeilinger from Hidden River BC in Douglasville. I like their approach to brewing IPAs with time in the bright tank to clear the beer and a nice mix of old and new world hops. Good stuff J!
    Cheers!

Good afternoon BAdvocates. This Lead Dog Brewing “Fade to Orange” wheat ale is my first alcoholic beverage in 10 days. Just getting over a nasty cold. Before I caught this, I hadn’t been sick since December 2019!

    Cheers friends :beers:

Lifting this one to @LesDewitt4beer 's Aunt, condolences to you and yours.

As for pizza toppings I'm on the sausage is better than pepperoni side of the fence and as far as I'm concerned, viva la fennel!

I like all common pizza toppings, but Anchovy & Cheese is a fave. Whenever I do homemade that's at least one pie. Big fan of olives as well... in any form.

    Different strokes... Cheers!
