    Highly carbed Nelson/Sorachi Saison I bottled nearly a year ago. Still glorious. Fermented at 85 degrees gets that Dupont strain riled up. I need to brew another pale Belgian soon.

    This was my first ever (I'm now having my second) Sierra Nevada Stout. It's beautiful; I've spent so much time drinking huge, boozy, intense imperial stouts... and yet I can then try a standard stout like this that delivers awesomely with the chocolate, coffee and earth, with a slighlty smoky, roasty, finish of toasted bread... I'm really damn happy to reap so much enjoyment out of an affordable, common, standard stout.

    It's inspiring a zen moment whilst I listen to this FFVII track:

    Lakefront Holiday Spice Lager Beer. With all this snow here in Illinois and sub-zero temps, it's nice to have something that I like about winter. First time ever having this and I say it's delicious. Exactly what I want in Christmas spiced type beer.

    Finishing off with a Sixpoint Hi-Res. I've heard this compared to Bells Hopslam and I have to disagree. Hosplam has a nice breadiness to the malts and this is a missing that. A bit watery (as a feel Sixpoint beers are). To me this is an "imperial" west coast double ipa lol. (As this seems to remind of like a Ruination or a Hop Stoopid, but just beefed up a bit as those brews fall in the 8% abv range and Hi-Res is 11%.) Like a west coast type of dipa with that kind of astringency, but it does have a sweet malt backing like a midwest dipa. (Funny how this beer is made on the east coast, yet so far the only regional descriptors I've used have been "west coast" and "midwest" lol. Best stop while I'm ahead I guess.)
