    1) Phase Three Breach (7.8% canned 12/14/25): A NEIPA from Chicago with Citra, Galaxy, and Superdelic for flavors of peach, mango, orange peel, passionfruit
    versus
    2) Phase Three Dimensional Drift (8.0% canned 1/21/26): A NEIPA from Chicago with Mosaic, Amarillo, Krush for flavors of orange, guava, and blueberry bubblegum. (Mismatched the two blind)

Phase Three IPA Battle. These are always one of my favorites battles. First is Breach. Citra/Galaxy plus some Superdelic. Lots of pineapple notes. Pretty good.
Next is Dimensional Drift. Mosaic and Amarillo for some orange and blueberry flavors plus some Krush. Very tropical without being too sweet. Phase Three does some Amazing Mosaic work.
    Winner: Phase Three Dimensional Drift

...I'll tack on to @TheIPAHunter's reply: I will say I admire your sense of 'fair play'...I do say this, too...when reasonable time passes, all is fair in beer acquisitions...

Sleeping Chamber from Wondrous. Ode to Alpine Nelson. Me on impromptu call w/ ex brewing partner:
Him: What aromas are you getting off that?
    Me: Intense white wine, peppercorn.
    Him: Excellent.
    Me: Drippy wax candle.
Him: Oh shit, I might have to seek that one out.
Me: Sir, there's literally a candle burning nearby.
    Peace...

Having a Fiddlehead IPA - much better than the Dogfish Head Covered in Nuggs - much better.

Just went out and scraped off the driveway as the snow is starting to turn to freezing rain, and rain later on. Much easier to get all that snow off before it's waterlogged, heavy, and frozen. Then I threw down some ice melt to help keep the ice at a minimum. Should be in good shape tomorrow morning.

...but Bill owned (or at least worked in) a junkyard...probably had a junkyard dog that lapped up Grain Belt in his dog bowl back in the day...mean as a rabid skunk, as loving as a newborn babe if he found Juicy Lucy's in the same bowl...am I right or am I, well, I dunno, dreaming of Stroh's from my Great Lakes past and half-inebriated from kerosene and propane fumes in the 'Fortress of Solitude'...

I always buy the whole San Marzano DOP tomatoes and then puree them a bit in my food processor. But what I've been doing instead of chopping an onion and sauteing it, I slice it into chunks and toss it in with the tomatoes and some garlic in the food processor so they get pureed right into the sauce. Works really well and makes for a really tasty sauce.

And of course, a healthy does of some red wine, usually about a 1/2 cup. I used a Cabernet Sauvignon in this batch. Gives it a nice earthy touch. Got the pasta water on now and will be making my angel hair shortly. :sunglasses:

    Cheers!!
