    Grilled a couple of hand pounded tenderloins and a couple of pork loin chops for dinner tonight. SA Festbier while grilling. I opted for the hand pounded tenderloin and tots. Cheers!

    Good evening, all! Low 50's and brisk here in the Cedar Valley, which is grillin' weather from where I'm sitting. (Of course, all weather is grillin' weather from where I'm sitting.) Tonight it's a boneless ribeye, marinated all day in a rub of kosher salt, fresh-ground black pepper, garlic and onion powders, Herbes de Provence, and avocado oil and grilled to medium-rare over a gas flame.

    Paired with 2018 Bogle Essential Red, a blend of Petite Sirah, Syrah, Old Vine Zin, and Cabernet Sauvignon. Bold and jammy, it cuts nicely through the fattiness of this beautifully marbled slab of meat. I wonder how it'd taste with steak tacos? I'll find out soon enough. Cheers!

    I'm having dinner at my neighbors tomorrow, so I picked up some fresh turkey thighs for lunch today. I seasoned them with a Cajun spice rub and I'll grill with offset heat till they're done. Naturally I'm drinking Celebration Ale

    First day in probably 7 months that it’s been cool enough to use the smoker! So doing the new tradition. Every year we’re fortunate enough to have an insane amount of Thanksgiving leftovers with sides for days, but the turkey runs out quickly. So starting last year I decided to smoke a turkey the Fri or Sat after thanksgiving; fresh turkey with leftover sides is the jam.

    Anyways, starting off light with this one while I prep the bird and the smoker.

    Finished product yesterday with a Cranfather pairing (really enjoyed that beer a lot too!).

    In terms of marinade/prep it’s the easiest turkey recipe you will ever come across. (Lots of) fresh garlic, salt, pepper and a very generous butter coating. Smoked low at 225 with natural lump charcoal and hickory wood. It’s so easy and i’d put it up against any turkey I’ve ever had. I know people that go ALL out, multiple day brines, injecting into the breasts, fancy custom rubs, etc. Can’t say any of those fancy approaches is a lick better than this basic one. If you have a kamado style smoker give it a try!

    I do basically the same turkey except I smoke with cherrywood and pecan blend. I also make a compound butter to coat the outside with that includes the garlic/salt/pepper/rosemary/sage/thyme.

    Above freezing temps soon will force me to grill. Roast up some beefy things for later use. Oak, cherry, pecan. Wondering what citrus wood does for smoking foods. Or almond wood. Hmmm. Where to find it.

    That looks great! I've only grilled a whole turkey one time, and although it was very good, I'm partial to deep frying my turkey. Again, excellent job!
