What Beer Goes Well With Snack Sticks???

    The answer - every beer goes well with snack sticks. I've been wanting to smoke my sausage for a long time and I finally did it. I wanted to start simple so I purchased a sausage kit from Cabela's. It had the cure, seasoning and enough collagen casings for 25 pounds.

    I stuffed the casings on Saturday and smoke the sausage on Sunday. I got Saturday started off right with a BCBS Coffee and Odd Side Morningwood. I also had my son help me out seeing how he will eat most of these snack sticks anyway. We did 10 pounds using 80/20 hamburger, 5 pounds using pork butt that we had to cut and grind ourselves and the last 10 pounds was a 50/50 mix of the hamburger and pork butt.

    We fried some up to see how it would taste. The Cabela's seasoning package was for Hot Sticks but we barely detected any heat. I'll be mixing my own spice mixes in the future.

    This is what they looked like in my smoker when done. Unfortunately, I had a temp spike at the end and it cooked my sausage hotter than I wanted and it dried them out a little bit. I guess there were going to be problems the first time around. Oh well, lesson learned. The last picture is the snack sticks blooming for a little bit before I vacuum seal most of them.

    My dad and I recently got into making sausage. I agree with your reasoning to go with a pre-made spice mix first, then move on to crazier things. We put a bottle of Rahr Oktoberfest in some bratwurst we made recently, and it turned out fantastic.

    Send me some of those babies! I say an American pale, or a brown ale. Maybe a saison or flanders? Hell, I think anything works. Looks like you guys had a nice time
