What beer started your "Cellar"?

    My "cellar" has grown quite a bit in the last few years, but I realized that the one that started it for me is still there! Its a 2010 "Infected" GI Matilda; one of the recalled batches.

    Westvleteren 12. And it only started a cellar because I did not want to drink them all at once when I got them years ago.

    Three bottles of 2011 Green Flash Barleywine. Fairly mediocre beer. This was back when I was getting into craft beer and having a cellar sounded like a fun time. Just drank the last bottle the other week. Still mediocre.

    The first beers I put away to drink later were a Chimay Blue bomber and a Duvel bomber. I thought that was pretty cool at first.

    I actually took home a bottle of Old Rasputin and Dragon's milk for FREE from my workplace (none of these other guys would have wanted them) plus some other new hollands, but anyhow, I learned about cellaring, shoot, it was probably that very week! I drank the raspy before considering cellaring, hung onto the dragons milk for a couple months, but the very first beers I bought with the intention of cellaring were 2 Alaskan smoked porters and 2 Alaskan Troppelbocks. I hope to enjoy one of each soon, then try the others later.

    My stash have grown quite a bit over time, but if I remember correctly my first bomber I literally stored for a purpose was Firestone Walker DDBA.

    Stone 15 anniversary loved it fresh and thought it would turn into a nice porter. Still have it in my cellar.

    2013 KBS. Stored 1 4-pack at my parents house and 1 at a buddy's house. If doomsday comes I'm going to have beer supplies all around the state

    2012 Bitches Brew and 2012 GI Madame Rose. I am still sitting on them, but the cellar has expanded quite a bit since then.

    Naively asked the friendly owner of a nice mom-and-pop store with an impressive selection about Westy (mispronounced horribly). He pointed me to St. Bernardus 12 and suggested if I aged it 3 years I'd have something just as delicious. They retired shortly after, I think moved back to Europe, still have the bottle.

    About the same time, all within about a month of turning 21, I went on a pub crawl with BA Todd and was treated to a flight of JW Lees. Fell in love with that beer, with cellaring, and good beer.

    first craft beer that I bought with cellaring in mind was bells batch 9000. had one 2 weeks ago and it has changed some over the years but still one of the best beers I have ever drank.
