    Hardest for you to know was in the cellar and not drink? You can have a thousand bottles in the cellar, but I would think there is always at least one that you really just cant wait to have again. What is yours?

    I am sure there was this post before, but why not again?

    hotd adam never lasts as long as i want it to.

    bigfoot is a hard one to hold back on.

    abacus/sucaba would be difficult if i intended to cellar it. same with founders backwoods bastard, which likes to jump to the head of the line no matter what else i have on hand to drink.

    I don't really have anything like that. There's enough beer that one doesn't really call to me more than any other. But I also have basically 0 intentions of aging anything for the long term, at least that I have right now.

    Bourbon barrel aged stouts and barleywines. Also once Bigfoot gets 1-2 years old it's hard to ignore them.

    Abyss, Darkness, and the sleeper pick is this past St. Benardus Christmas. Love that beer and just so happened to be bottled on my birthday.

    I have one bottle left of Weyerbacher XIII, after reading some of the more recent reviews it's getting harder and harder to keep my hands off of it.

    I have a 2005 Bruocsella Grand Cru. It's the longest I've aged anything, and it's really hard to leave alone...

    Two Brett-tastic beers that went into the cellar recently have both been calling me; Rayon Vert and Love Child #2.

    I guess I don't really have any beer that I couldn't technically drive down to Asheville or go online to replenish. I don't have anything great, mind you. No KtG. No Rare. No Westy. In other words I can usually convince myself to crack open something unless I'm committed to aging it. Now with wines there are a few that I'd either need to pay three figures for or go back overseas to re-aquire, so a different story there...

    I feel you. I have two of those, plus two Twelves, and Eleven, and a Decadence. Trying to do an eight year Anniversary vertical but that Thirteen is amazing every time I've had it. It's probably one of the best 'aged' beers I've ever had.
