What Belgian Yeast + Amarillo and Simcoe Hops

    I am planning to split a cream ale wort and augment half of it with wheat DME and make something I never made -- a Belgian IPA. I recently had Tank 7, which uses Amarillo and Simcoe. What yeast?

    I've not loved (but not hated) straight saisons with 3711 (or Belle saison), but have heard it's good with hops (right, they may not be the same yeast, but to my palate they were close). Is that the way to go or do you want to steer me in a different direction?

    Houblon Chouffe uses Amarillo/CTZ (DH) and of course it has Ardennes yeast (3522), I've cloned it with good results. Another biggee is Duvel Tripel Hop (finishes with Mosaic or Equinox). I've had good luck with this recipe using Westmalle (3787) . . . have never used the Duvel strain (1388) but obviously it would be a good one.

    I would not use a Saison strain . . . would not care for that high level of attenuation. The goal I would shoot for is a perfect Belgian Strong/Tripel that is spiked with good ole American hops. Because I'm a wimpy drinker, I dumb-down my BIPAs to the 6% range. While Tank 7 is a good one, IMO it would not be a suitable starting point for a BIPA.

    In my rotation is an American IPA with the Amarillo/Simcoe combo, it's a killer.

    Yeah, I usually lag a few trends behind. Sometimes I can pass myself off as a retro old-school hipster. The bald-headed mullet look really helps.

    I once brewed a beer with Wyeast 1214 (Chimay yeast) and Centennial hops, and I liked how it came out.

    I agree, WY3522 would be a good way to go. However, I recently had a "tropical" tripel from a fellow home brewer. It was hopped with citra at flame out. He used T-58, and I found it really tasty. So that could be a dry yeast option.
    But if you're going for something more tank 7, I'd use 3711 or Belle saison.

    A brewer from Boulevard suggested the Westmalle strain. He said they use a proprietary strain but this would get me close. I haven't used the Ardennes for a while but have like it in a couple BPAs. It would probably be a nice choice.
