what is draught beer keg utilization

    Folks, looking for some research on what is keg yield. I can see some stats stating 70-75% which is fairly low. I understand foam is just partial problem with overpouring and free drinks as real ones. Any research you can point me to or personal experience would be super useful for my "back of the envelope" analysis on beer profit/margin.

    If you have a good draft system you should realize about 98% of the volume as sold. Foam does not take away from sales volume, it increases profit margin considerably.

    The only thing that matters is what goes down the drain and what is given away. Install and maintain a good system. What your bartenders do is entirely up to you.

    Draft beer can easily be a 5x profit over cost. The calculation is very easy, just look up ounces per keg format, figure your cost and your sales.

    At my bar we average 93% efficiency, but we use 500ml (16.9oz glasses) so that customers actually get the advertised 16oz pour plus head, and my efficiency calculation is based on 16oz pours obtained per keg, so either using a 16oz glass or dividing instead by 16.9 would yield a higher number for me.

    The lowest average efficiency I’ve ever had was when I was running a Belgian beer bar, because the bartenders would tend to pour over the pour lines on the glasses, so I would get 75-80% on most kegs.
