    Nothing revolutionary here, but:

    BCBS
    Zombie Dust
    Consecration
    Heady Topper

For beers I can actually get in Texas:

    Real Ale Four Squared
    512 IPA
    Jester King Black Metal
    Jester King RU-55

Grain Belt Premium - Abe Lincoln because it's everyone's favorite.
Surly Furious - Thomas Jefferson because it stands for pretty much everything I love about craft beer.
Sierra Nevada Pale Ale - George Washington of beers for me as it was the first one I ever had.
Great Lakes Edmund Fitzgerald - Teddy Roosevelt because it converted me to craft and blew me away with its awesomeness.

I would have to go with breweries and not direct beer

Samuel Adams a huge broad base with some real quality beers and highly supportive of other crafter breweries
Anchor Brewing Company being the first craft brewery
Dogfish Head for taking craft brewing into more experimental areas
Avery is the last choice as I believe they make amazing beers like Maharaja and Liloki Kapolo
