Lately it has been Ninkasi Total Domination. Easy to find, cheap and everywhere. Otherwise it is Pyramid Outburst.

It used to be 90 Minute, and I guess it still is if I'm in a bar and they have 90 and nothing else new or exiting, but lately, I find my "Go-to" is what ever I've never had before! My fridge is pretty much chock full of stuff I haven't had yet, and stuff I'm aging.

    Four Pack: Founders Breakfast Stout
    Single Bottle: Stone Arrogant Bastard

Yes, not very imaginative of me, but you did want go-to beers. I've never been to a place that I could not find these, at the very very least.

I don't really have a "Go To" beer. The closest I come is a "Go To" Brewery.

That would be Stone. I usually have more than one bottle of something from Stone on hand.

The runner ups would be Alesmith, The Bruery and Port Brewing, of which I usually have at least one bottle on hand.
