What should I brew this weekend?

    I'm interested in Vic's Secret and Ella right now, both AUS/NZ hops. I'd like to try a simple English-style pale with the Vic's, and a German pils (kellerbier) with the Ella.

    Please let us know how this one turns out. Shouldn't be too long now, right?

    I've used honey as my 100% fermentable source of sugars for many years...never once have I had problems with honey at higher temps. Be it off flavors or anything else. I've made mead for many years too and never found what you hypothesize to be true in meads either...and that include fermenting as high as 95-100.

    Ella has a lot of hype behind it, but every time I've used it in IPAs, it has been a HUGE disappointment to me...never came out with the described flavor or aroma of "Galaxy's little sister". I got much more floral and spice in comparison to Galaxy's big juicy fruit tones. It might work well in a Keller or Saison, but not in a hoppy beer style.

    Good to note; floral and spicy, and even a touch dusty/earthy is how I've heard it described, so that's what I'd be going for, hence the German pils/kellerbier. I've never used it so I'd go 100% the first time 'round; and once you understand it you've got the knowledge to apply it wherever it fits. I'm not a fan of Spalt hops, for example, but I know where they'd fit.

    It will probably be about three weeks. I'll be cold crashing and kegging as soon as the gravity is stable.

    Buy more and make a single hop IPA...if you like hoppy beers, you'll dig a 007 IPA! I dont have my recipe with me, but I'll share it with you if you'd like?

    I'd like to see it. As noted, I love that orange note, and although I won't be doing another IPA until spring - - - wouldn't that be a great spring/summer IPA?
