What should I brew?

    I may have a cool opportunity to use a kick butt 10 gallon brew system. I only have 5 gal fermenters so I now have the chance to do a batch and split it making 2 similar but different variations.

    I'm looking for a flavorful, low ABV, low hop session beer for the summer. One I can add something to during fermentation or secondary.

    Any thoughts?

    With those parameters I would go British Mild.

    American Brown - you can add vanilla, coffee, cocoa nibs or a combo to half the batch. you could also go wheat and add fruit to half

    It could be interesting to just use different yeast strains brewing a Kolsch and a Witbeer

    Saison! Saison yeasts are great to play around with. If you don't want ten gallons of saison, you could pitch wlp500 or wlp530 in the other five gallons to make a belgian blond.

    I recently did a split batch of a 4.8% abv saison and used yeast bay saison II and yeast bay wallonian. Enjoying both with the recent hot weather.

    I would do a Hoppy APA and Hoppy Saison

    I agree, but I'm a hop fiend. A hoppy APA and a hoppy saison sound likes great dichotomy to get 2 excellent but different styles that are perfect for hot weather! Making 10 gallons of the same style, just different variants, doesn't sound as fulfilling to me.
