What specialty grains should I use?

    I want to make an extract recipe for an Chocolate Imperial Stout and an English Barley wine. I am going to use the same base malt for both(light DME). I only want to use 3 to 4 specialty grains for each. What would you use? Thanks in advance.

    The Imperial Stout needs roasted barley, and you might want to throw in some chocolate malt. Lots of imperial stout recipes have oats, special b, crystal 80l or so, etc.

    For an extract batch of imperial stout, I would use some roasted barley, black malt, chocolate malt, and probably some crystal for some sweetness.
    For an extract barley wine, keep it simple. I would recommend using a Maris Otter extract if you can find it, but if you're set on light dme maybe some crystal with a pinch of chocolate malt for color? Depends how dark you like your barley wines.

    For the imperial stout I'd recommend roasted barley, chocolate malt, +/- crystal malt, +/- black patent. For the barlywine I'd recommend a touch of English crystal malt (like carastan), and that's about it.

    I like a bit of Special B in my Imperial Stouts. But go easy on it - maybe 4 oz in a 5 gal batch. Roasted Barley is a no-brainer and maybe some Chocolate malt. I'll go with the consensus on the Barleywine. Keep it simple.

    In order to utilize oats properly they really need to be mashed.
