What takes more skill?

    “Consistency of their IPA, DIPA, and flagships have been questionable in the past few years too ime.”

    Do you think the ‘inconsistency’ related to Smuttynose is due to having some of their beers brewed by F.X. Matt brewing over the recent past?

    Its a reasonable question, but when the ABV varies by 2% from batch to batch, the beer is changing to. You cant have that kind of range and have a consistent end product. Small changes in OG and attenuation...yeah, those can lead to reasonably consistent end products. But not the size of changes that his charts show.

    Just a quick example (I remember seeing more variation than this, but this was first I found):

    Sept 11, 1850, Whitbread Porter, OG=1063.7, ABV=6.19%
    Aug 27, 1852, Whitbread Porter, OG=1056.0, ABV=4.84%

    Those are the extremes in the time frame. In that period, they hit just about everything in between. The Jul 31, 1852 batch was 5.97%, so it wasnt a consistent decrease over time either. It just wasnt consistent. Hopping rates and boil times and pitching temps were consistent. But they werent getting a consistent OG or ABV. Were they changing amount of malt or was the mash efficiency that variable? Or both?
