I have a small wine chiller that isn't currently housing any wine and I have been putting age worthy beers in there, it's set at 50 degrees right now.

Used to do 54 but found myself chilling the beers down for about 20 mins in the fridge before drinking them. Dropped the thermostat on the fridge to 50 and that seems to work well.

Have the beer freezers at 52 at the probe; so between 48 and 55 depending on where the bottle is.

I have a small wine fridge that I don't use for wine. I keep it set to 52. It currently houses some 2013 Bigfoot and 2012 Expedition Stout.

I keep all my cellar beers in a closet in the middle of the house, no refridgeration, but no light either. Temp is in the mid to high 60s. I realize that this is high, but it is what it is. I already have a fridge for food, a fridge for fermenting, and a fridge for serving beer (and storing hops in the freezer). No room for a 4th fridge for storing beers for aging.

I keep mine in a closet on the outside wall of my basement. No light and I'd imagine its 60ish

curious what you experts think about Firestone recommending their beer be cellared at 45 degrees

From my experiences, the lower the temp the slower the beer ages due to slowing down the yeasts activity. Conversely, warmer temps will activate the yeast, hence speed up the process.

My guess is that Firestone gave a lower temp to extend the life of the beer before it starts to "fall off" from years of aging.
