What the hell man?! (Over-carbonated beer)

    Oops, I should have clarified that the fusarium causes the toxin DON, but it is not a (known) health risk. It is a toxin for barley. You are correct that there are a lot of factors that go into creating consistent beers. It is also worth noting that if you are buying beer from small breweries in bottles, even if the quality control is great, most of the beers you buy are not going through great bottle fillers the way larger breweries use. As a result, shelf life is greatly decreased. I recommend checking dates on every 6-pack you buy.

    I've seen this happen with mutiple beers the past few years. Most notably was Jester King Black Metal. I had two different bottles from I believe different batches which were an overcarbonated mess. Really put a bad taste in my mouth (literally) about JK unfortunately

    Over-carbonation destroys the beer flavor. I'm glad that most breweries are spot on with this.
