What to add to a Saison

    I was actually thinking of hop bursting Amarillo in my next saison for all IBUs and flavor. Are you suggesting that this is a bad idea?

    I think it's a great idea. I just did a 10min boil extract saison with the only additions being a FWHish addition of 1.25oz citra and a FO/steep addition of 6.8oz belma.

    Thanks for all the suggestions - lots of good information here! To delve deeper into specifics, does anyone have a tried and true recipe for a saison using extract or partial mashing at the most (with or without adjuncts)? I'm not set up for all grain yet.

    The Saison style is well suited for extract brewing. A suggested ‘grain bill’ is:

    · Briess Pilsen Dried Malt Extract (DME): 6 lbs.

    · Table Sugar: 1 lb.

    This will result in an OG of about 1.060 (or so)

    If you are using Wyeast 3711you can utilize just DME since that yeast is so attenuative.

    I am ‘old school’ in my Saison brewing in that I personally utilize European hops:

    · 1.5 ounce Styrian Golding hops for 60 minute (about 7% AAUs)

    · 0.5 ounce East Kent Goldings for 15 minutes of boil

    · 1 ounce of Styrian Goldings at end of boil

    Some folks like to use American hops like Amarillo to brew their Saisons.

    I like what some Rye malt does in a Saison.

    I've added 6ml of raspberry extract to a few pints and 6ml of strawberry extract to a few pints. Both we're good, but the sweetness needed to be increased and bitterness decreased to be great. The golden naked oats is interesting.

    I like using citrusy hops for finishing and then let the yeast make the spice flavors.

    American Farmhouse or Traditional Saison...that is the question...or maybe something in between : )

    Just add yeast. Belle Saison is a spicy s.o.b in my limited experience.
