What to brew next?

    I haven't brewed in a few months, just because I've been adulting a lot with parental/work/home responsibilities, but I am feeling the brewers bug biting so I am trying to decide on what to make next.

    So far I have it nailed down to either a "pumpkin" ale using sweet potatoes, butternut squash, and pumpkin (I've used all three separately in the past, but I think using all three would be interesting/fun). I would use my typical Pumpkin Ale recipe which has always been well received.

    Or using WLP644 and NZ hops to make a new version of a pretty basic pale ale.

    Which do you think I should brew next? What is next on your list?

    I just brewed a hoppy pale ale on Sunday, cant wait for it to be done. Next up is an oatmeal milk stout. Considering a barleywine after that. I am using the same yeast for as many beers as I can so I can figure out which styles I really like it in.

    I always like to have something hoppy ready to drink so I would go for the NZ Pale Ale. Then brew the pumpkin ale as soon as you have the next opportunity.

    I just brewed a moose drool clone last saturday. waiting two weeks is gonna kill me. I was going to make a basic cascade/galaxy pale ale next

    That 644 pale w/ NZ hops sounds tasty. That gets my vote since I don't care for pumpkin beers.

    My to-brew list:

    Extract pale ale/IPA tweener with wet cascades and peaches from @JohnSnowNW estates
    Dark Mild
    English Barleywine with oak and bourbon (basically brewing the mild as a starter to be honest)
    2 altbiers - 1 regular and 1 with sweet potatoes and maple flavored whiskey
    Galaxy/Citra/Mosaic IPA

    Also gonna throw a cider in there at some point... shhh don't tell the mods.

    This should more than cover me for the rest of 2015. I'm looking to build a pretty strong pipeline as I'm considering purchasing little to no commercial beer for home consumption in 2016.

    Pumpkin ale absolutely. Will be brewing 10 gallons of mine with my brewing bud around the 20th. Just kegged my last saison of the summer. All pils, styrian holdings, and 3711.

    I have a Vanilla, Cocao, Honey, Bourbon Oak porter in the secondary right now!! I'll be bottling on Monday!

    I vote hoppy pale ale, just because its something I'd rather have on hand than a pumpkin ale. Those are once in a while beers for me, to the point that I don't brew them.

    I thought about doing a pumpkin ale my self, but after one or two glasses I am sure I would have my fill and want to move on... So I will just stick with buying a bottle or two from the store and having a glass on draft if I see one (had pumpking yesterday... very spicy this year and a bit harsh).

    I currently have an Oktoberfest Märzen in my fermenting freezer at 34F for the next 2 weeks until I bottle... I am planning out my next brew which will happen on the bottling day for the lager... I am thinking a big-ish stout... 8-9% or so. Recipe is still in development, but so far:

    Malt Bill:
    2-row (67%)
    Munich (14%)
    Chocolate (9%)
    Roasted Barley (5%)
    Black Patent (2.5%)
    Victory (2.5%)
    Perhaps some oatmeal, not sure yet.

    Hops:
    Magnum and Willamette

    Yeast:
    WLP007

    OG: 1.084, FG: 1.023, 8.1% ABV and 60 IBU



    I plan to brew whatever that recipe will end up at and right away do a harvest IPA once primary is done.... Transfer the stout over to a secondary carboy and put it away to age a bit. The IPA will feature my home-grown Chinook and Cascade hops.

    Pumpkin ale this weekend and then going to try and squeeze in a FW wookey jack clone before I come off vacation next week.

    Do the pumpkin ale, man! You can brew a pale ale any time of year but this is the time for that style (if you like it..).

    I've got an imperial pumpkin ale that's being brewed this Sunday.

    On the to-do list:
    - wild cider (wife loves sour ciders)
    - harvest pale ale, with cascade/centennial hops from my cousins hop farm, as well as from my own crop
    - 'leftovers' american saison
    - small batch of high gravity wheatwine - aged on oak
    - weizenbock

    I've still got some in the freezer. I still plan on making a spruce tip pale ale at some point, but I want to build a small hopback for them first. I think that would be the best use of the spruce. But maybe I'm wrong.

    I envy your home grown hops. I plan on trying next year, but I just couldn't make it happen this year.

    What temp did you ferment? The range is pretty broad on wlp644. Also, how long did fermentation take and how well did it attenuate?

    Will be my first time harvesting hops! Actually got the bines from FatHeads to grow for a community IPA they are brewing. They are going to throw a special release party or something for those who grew the hops for them.

    They are brewing it mid-Sept, so I only have a week or so until I need to harvest what is ready. My Chinooks won't be anywhere near done, but my Cascades really took off... So I may be able to deliver a pound or two to them maybe. Then I will let the rest keep growing and use that along with whatever I get from my Chinooks later on... I plan to just whirlpool/dryhop with them though and use a different bittering hop. Excited!
