What to do with barrel aged leftovers.

    i recently purchased some barrels from a local brewery. They had a few gallons of beer leftover in the barrels. The beer is a stout, very dark with a very rich smell. I filtered out all the particulate using cheese cloth. I then boiled it fir about 1 minute at 165+ degrees.

    My question is can I still use this to make a sauce or marinade? Or am I likely to kill someone? I don't know how long the barrels were dumped for or what could be growing, however I do know the barrel does not have any mold, and that the bung was still very tight prior to me pulling it out?

    Just a fun kitchen experiment.

    Totally a guess, but try a sip. If it doesn't make you feel bad/kill you, it's probably ok for a marinade.

    Too bad you boiled it! I assume you didn't taste it beforehand?

    If there was no visible nastiness I'd assume it would have been fine (& tested it on yourself, first). I have a friend who won a BCS barrel & bottled the dregs - he got about a dozen 12 ouncers out of it as I recall - & they were dead flat, but amazing even years later. I was also at an event before buying Great Taste tickets several years ago where they were serving sippy cups out of a previously filled barrel. Also amazing.

    I highly doubt it's toxic. If it were me, I'd take a 3-4 ounces some night, sip it down, see how it goes. If you wake up the next morning, do what you'd like with it (& if you don't wake up, uh, well, problem solved!).

    If you boiled it, you killed anything that will make you sick. Bad news is that you could have taken flavors out too. Real question is does it taste good now?

    Yeah it's pretty good, I think it evened out the flavor and made it less bitter. I had the actual beer right next to it definitely less alcohol, but a smoother taste
