What to do with my yeast?

    I made a starter on Saturday for a Helles I intended to brew Sunday but didn't get to. Can I just cover and keep in the fridge until next Sunday then bring back to temp, or do I need to move to a sterile jar and repitch a snother starter?

    4-6 weeks is my threshold. I'd say 4 if it's a lager.

    Was more concerned as to whether I could pitch the yeast with "waking them up" again, not their lifespan. And it's a Kolsch yeast, I'm doing a "faux lager."

    Adding the yeast to your beer wort will wake them up.
