what to drink now or later

    New to aging beers but i have around 10 beers...some I know i want to get some age on, some Im not so sure...was curious what I should drink now or save for later of...

    heavy seas blackbeard's breakfast
    evil twin imperial biscotti break
    evil twin imperial donut break
    great divide chocolate oak aged yet
    avery fortuna
    evil twin even more jesus
    prairie bomb
    westbrook mexican cake
    boulevard aztec chocolate
    dorris the destoyer
    expedition stout
    devil dancer

    This is just my opinion on what I would choose to do with your list:

    heavy seas blackbeard's breakfast - drink within 1 year
    evil twin imperial biscotti break - drink within 1 year
    evil twin imperial donut break - drink within 1 year
    great divide chocolate oak aged yet - could cellar
    avery fortuna - could cellar
    evil twin even more jesus - could cellar
    prairie bomb - drink within 1 year
    westbrook mexican cake - drink within 1 year
    boulevard aztec chocolate - drink within 1 year
    dorris the destoyer - could cellar
    expedition stout - could cellar (this is a great long term cellaring candidate)
    devil dancer - drink now

    FWIW, there are a lot of reports that Devil Dancer is better than fresh after a couple years on it.

    My take, for what it's worth:

    heavy seas blackbeard's breakfast - Wouldn't cellar. Drink at earliest convenience.
    evil twin imperial biscotti break - Wouldn't cellar. Drink at earliest convenience.
    evil twin imperial donut break - Definitely wouldn't cellar. Mine fell off quickly.
    great divide chocolate oak aged yeti - I might give this one a year just to see how it evolves.
    avery fortuna - Haven't tried it, so I cannot comment
    evil twin even more jesus - I'd cellar for a year and then compare it fresh. Personally, I think EMJ is better on the fresh side, but I've held back a few bottles for a vertical myself.
    prairie bomb - Drink fresh.
    westbrook mexican cake - Drink fresh.
    boulevard aztec chocolate - Drink fresh.
    dorris the destroyer - Very cellarable.
    expedition stout - Absolutely one of the most cellarable beers on the planet. Think about starting a multi-year vertical if you haven't already
    devil dancer - Cannot comment.

    So, in short, I'd really only cellar Expedition and DORIS. Those two have proven track records. EMJ and Chocolate Oak Aged Yeti are a bit less known, but I think they might be worth a try.

    Everything else I'd drink at my earliest convenience. In every case, the adjuncts (i.e. coffee, chocolate, chiles, spices) make these beers so outstanding, and they will only fade with time. Just my thought.

    Well, @elektrikjester pretty much hit the nail on the head but the only advice I have to offer is to go ahead and age that Devil Dancer. I hear it's actually best with a year or 2 on it.

    I would suggest enjoying our Imperial Stout X - Aztec Chocolate sooner than later as the contribution of the cinnamon/chocolate/peppers is only going to fade with aging.

    2013 Uncle Jacobs, had it fresh and way hot. Had it with a year and was really really good. Last bottle of 2013.
