Serrano is a medium to mild pepper in terms of heat. Why don't you pair it with some Mexican food (enchiladas, chimichanga, mole etc...).

My tolerance from spicy food has waned, I do enjoy it but my body doesn't so much anymore.

A nice ceviche would be nice.

    Prilosec.

Just kidding, kind of. I pair spicy beers with chicken. Just works for me.

Well, I wouldn't pair it with anything spicy. My first reaction is to eat a piece of chocolate cake with a "hot" beer, but then I see that it's fairly hoppy as well and cake starts to sound gross. Ceviche might be the answer here but I'd keep the heat out of the food for sure. I'd even try a bit of sweet in the ceviche. Wildflower honey sounds about right.

The beer is providing your spice profile for the meal so keep it simple but generous (e.g. cheese pizza, fried rice, fried fish)
