What will be a classic Belgian Ale yeast ?

    What wold you use for a classic Belgian Pale Ale yeast, specifically for a low ABV beer ?

    Agreed, I love that yeast. Just be sure to use a blowoff!

    WY 3522 Ardennes. 3787 is best for a tripel

    one of my all time favorite beers is a belgian table beer


    OG: 1040-45: IBU 26
    80% Pils
    20% Wheat berries (or other flavorful unmalted grain)

    Hops
    TBD Fuggles 60min
    1 oz Fuggles 10min
    1 oz Fuggles KO<170F

    WY 3522 Ardennes

    Wyeast 1762 for me. I can't think of any low ABV pale ales that use it (the Rochefort strain IIRC), but it's the one that works for mine.

    My preferred Belgian Yeast is 3787. I have only used this yeast strain for moderate-high gravity beers so I am uncertain how this yeast would perform for a lower gravity ale. I really like the combination of esters and phenols that 3787 produces (for moderate-high gravity beers).

    I was on a Westmalle strain kick for a while. More recently I've been appreciative of the Ardennes strain. My first couple Belgians were with the Chimay strain. In those days, I didn't have consistent temp control and was less careful about pitching rate. Could be I would enjoy my results with that strain, too, if I tried again now.

    3787 totally works for small beers. I did a couple this past December, Pils malts and a little sugar, low level of hops. My basement was really cold this winter so I didn't get quite the yeast flavors I hoped for, but I got a couple tasty 4.5% beers. I was just thinking tonight that once it warms up, I need to do another small beer with this yeast and then something big with the D90 and D180

    Can't imagine that any of the Trappist yeasts, or any yeast that can handle high gravities, would not perform well with low ABV beers. Ultimately, this thread is a bit moot, any of the classic Belgian yeast strains should do well with a low ABV pale ale, and it will be a question of personal preference as to which will suit the OP's taste the best.

    De Koninck is the classic Belgian Pale Ale, brewed in Antwerp. WLP 515 Antwerp Ale has a description that matches the flavor profile of De Koninck. It is a Platinum seasonal strain.

    WLP 515 is my favorite, but when not available 3787 makes a great BPA.

    Lots of good suggestions, but the best Belgian Pale Ale I ever had was fermented with 3944 . . . it's not just for wits.
