I'd go with a cold war theme and call it MAD brewing (mutually assured drunkenness) with such oh-so-clever names as Tsar Bomba Imperial stout and Titan II DIPA. All the beers would only be in bombers or custom-shaped growlers.

Tidewater can also make Starbuck Stout, in honor of the Moby Dick first mate. Then, send kegs to Litigation Station so they can handle the C&D from the Seattle based company that makes coffee or something.

Oh, for what it's worth, were I ever to open one, I'd name it Progressive Metal Brewing, and feature odd ingredients a la DFH, and pay tribute to my favorite metal groups. Sevendust Saison, Schwarzwater Park (Opeth), Artifacts of the Black Rhine (a German lager for In Flames)... oh... the idea are endless.

    It wouldn't have a name.

    Too rare for that.

    Probably something pseudo-intellectual or art-related.

    Drain Pour Brew House.

Set the bar low and you'll clear it every time.

This Tony likes Tony's Joint. Using this in CO may cause confusion.

Mine have to be Tony the Kraut

Beers would have central/southern Texas references incorporated in to the names.
