What would your dream beer be?

    No, I had BCBS, their BW, and NW's this year. And these were all firsts for me. Fell in lust with that BCBS, and I'm a fan of BOMB!....so, seems like like good combo for me.

    Prop 16 was brewed with chipotle peppers and cacao nibs and aged in bourbon barrels that previously held maple syrup. So it had some other stuff going on, but it did hit that pepper note. It wasn't a huge hit, so you could probably trade for it without too much trouble.

    Wow. That does sound great! Then they bring a little CBS into the mix with the maple. After your post I looked it up, but it doesn't mention peppers in the description. I'll check some reviews. Thanks, man. Cheers!

    I have thought deeply about this .. I would have a spiced stout at 14% aged in Woodford Reserve Maple Bourbon Barrel aged w/ Marshmallows, Cocoa Nibs, Cinnamon, Vanilla Beans, and Chilies

    An imperial version of two hearted from Bell's. Call it 4 hearted I guess. And only have it be a few bucks more than the regular one. That would be sweet.

    A light(ish) English Bitter style beer brewed with rosemary and other herbs, which I guess would make it a Gruit then, oh yeah with oatmeal providing the body of a Founders beer (medium to heavy) and at 5% ABV.

    My idea for this beer is one that is reasonably sessionable, that tastes a mixture of herbal, dry and bitter with just enough sweetness not to be outright dry.

    Plus I've always thought rosemary would go good in a beer, though I've only tried 1 beer with rosemary so far (Stone Saison Du Buff) and I didn't really get any rosemary from that.

    PS: If any brewer makes this beer I'm suggesting please send me samples, cheers!

    My favorite beer is Prairie Pirate BOMB, a Rum BA Stout with vanilla, coffee, cacao, and peppers, so my dream beer would be a variation on that. Perhaps turn down the coffee a notch and crank up the cacao a bit. Wouldn't take much, pretty perfect already.

    If you can, 4057 by Jughandle was a nice DIPA with Apricot notes. Maybe not as prominent as you are looking for, but it was a good one.

    Boulevard did a rosemary IPA as part of their Tasting Room series. I thought it was outstanding. The rosemary was prominent throughout and provided a natural complementary note to the hops. I hope I see it again.

    Founders Breakfast Stout with Jamaican Blue Mountain and Madagascar vanilla beans. But, available in 4-packs for the same price.. :slight_smile:

    - Barrel Aged Imperial Stout with coconut aged in maple syrup bourbon barrels with Toppling Goliath

    - Barrel Aged Barleywine/Stout blend with Fremont: Barleywine aged in Pappy Barrels and Stout aged in Port Barrels then blended

    - TRIPA with Citra, Galaxy, and Mosaic, then DDH with Simcoe and conditioned on coconut with The Veil

    For my tastes, this was the perfect stout. Like Pirate Bomb, but way better.... guess it also doesn't have coconut, but that's fine because it was perfection as is.

    So my dream stout would be more of this.
