What yeasts do you keep in your corral?

    I currently have on stock:
    California Ale - WLP001
    Kolsch - Wyeast 2565
    Belgian / Monastery / Trappist - WLP500
    French Saison - Wyeast 3711
    High Gravity - WLP099


    I'm in the market for a new yeast. I was looking at a British ale yeast like WLP005, or Scottish ones like WLP028 or Wyeast 1728. Then I realized they might be too similar to one I have already. I'm really looking for a yeast that is unique among this group, yet not too crazy. I was thinking of a lower attenuating, super malt-forward strain. Advice would be appreciated.

    What yeasts do you keep on hand? Need ideas...

    US-05
    BE-138
    Whatever Kveik yeast LHBS has on hand.
    A vial of WLP645 to add to stuff I fermented with the BE-138

    Dregs are stored long-term as yeast cakes after a good fermentation. Usually make a fresh starter if the cake is more than 4-6 weeks old.

    edit: For the OP, I highly recommend WY1728.

    Usually depends on the kinds of beer I'm brewing. I try to plan on using the same yeast a few in a row so I don't overstock my fridge with yeast. Currently have wyeast 1318, 2124 for my lagers, and some 2565 kolsch which I think I'll use to make a mango kolsch sometime soon.

    I'll second the recommendation for 1728. Very good yeast.

    Currently I have packs of US-05 and Mysterium kveik strains on hand. I haven't done much in terms of repitching and storing yeast over the last dozenish years of brewing. Thinking about doing this with the kveik strains I have on hand, as it is not clear that I will have a chance to buy them again as I just learned the manufacture is taking a hiatus.

    US-05

    I try to keep a couple packs on hand. I don’t sit on any liquid yeasts. Guess I’m pretty anal about pitching the freshest yeast possible when it comes to liquid. But I’m pretty lucky having 4 LHBS within a half hour of my house so it enables my analness.

    I usually keep

    US-05
    Wyeast 1428
    S-189

    That covers me for a lot of styles I make, on those rare occasions these days when I actually get around to brewing. If I get a request for an IPA - not a style I make for myself - I’ll often go with Wyeast 1272.

    I went for a pack of the 1728 and also went for Wyeast 1450 (Denny's Favorite 50). Very excited to try both!!

    Brewed a light ale today and just pitched the 1450. In the near future, I'll use the 1728 for a malty Scotch Ale.

    CMY-01 (Brett drei harvested from crooked stave’s St Bretta). I use this for all of my Berliner weiss beers.

    Omega Hornindal Kveik. Used for my NEIPAs.

    Imperial Rustic, and Yeast Bay’s Saison Blend 1 are used interchangeably for various Saisons.

    Yeast Bay Amalgamation. Used as primary yeast, or secondary for long term Brett beers.

    These have pretty much been my main yeasts for the past few years now, although I’ve used US-05 in a few brews lately too, cuz it never disappoints!

    US05 for IPA, S-189 or 34/70 for lagers. If I am brewing a Kolsch will spring for WLP029 and for Saison always WLP565.
