I had a double brew day last weekend. a festbier with 34/70 (my first lager). And a hoppy pale ale (my first hoppy beer). I need to take hydrometer samples in the next couple days, I think it should be finished at that point. The kausen has died down and I've been letting the temp increase. Also, I discovered you can make a sparge arm with a couple of clamps.

Inaugural batch on my new all-grain (BIAB) setup this past weekend. Brewed a NE-ish IPA w/ roughly 80% 2-row, 10% rye, and 10% oats. Simcoe, Azacca, and Mosaic.

Unfortunately, the mash temp crept up way too high, in the neighborhood of 160-165 :grimacing:. Hope it's palatable. Planning to DDH if it's tasting ok.

I've mashed at 160°for session beers with good results. Your FG will definitely be higher than if you had mashed lower, but I don't think it'll be undrinkable. I think the amylase enzymes denature at 168°, but don't quote me on that.

The Hefe and Lemon Shandy that I brewed earlier this summer are kegged and carbed and drinking very well. The APA that I brewed recently will be transferred to the keg and dry hopped later this week. Brewed an Oktoberfest last weekend that is fermenting nicely.

How did you measure that mash temp? I’ve found that the built in thermometer in my kettle doesn’t give accurate readings when the bag is near the probe. I take all of my temps with BIAB with a different thermometer.

Hmm you might be onto something. Yes I was using the kettle’s built in thermometer. In your experience does that give higher or lower readings with BIAB?

Higher. I’ve taken it out and calibrated it a couple times. It’s always accurate when I’m heating water for mash (before I put bag in), when heating up to boil (no bag), and when cooling (no bag). But for some reason during the mash with the bag in, it reads ~10 degrees higher than my other thermometer when I read off the top after stirring.

At the end of this week my dad and I are going to brew our second batch (a Heady Topper clone) and then maybe next week we're going to brew a porter from the AHA website (but you'll hear more on that later :stuck_out_tongue: ).

Brewing up ten gallons of 10.5% imperial stout which will be split between two homebrew club guys who are coming over to brew today. Should be fun. 5 gallons is getting Belgian yeast and the other half is getting Chico.

So I brewed up my wet hop IPA the other day and everything went really well… If anything, just a bit short with volume into the fermenter due to the losses by the epic amounts of wet hops thrown in. The wort was tasting especially nice, the small additions of biscuit, C10/C40 and perhaps the mix of 2-row and Pils made for a slightly more interesting malt complexity.

Did a few things on the fly, such as adding 1/2 oz Galaxy 30min into the boil as I worried my addition of Warrior at the beginning of the boil may not get it as bitter as I want it (only around 35 IBU added)… Adding the Galaxy bumped it up to about 50-55 before any of the late/whirlpool additions. I’m not after juicy with this one… It will finish at a slightly higher FG 1.011-1.012 than I typically do with IPA’s such as this, so I wanted some bitterness to balance that residual.

Pitched the WLP007 at 64F and allowing to ferment at 68F. Yesterday when I added my 2.5oz bio-dry hop of Galaxy and another 6oz or so of wet chinook, the aroma coming out of this beer is unlike any other I have done. To describe it best, think of when you walk into a commercial brewery after they started to boil. An intense sweet malt and beautiful hop aroma. I can’t get enough of how it smells!

Pulled my FFT and got that on the stir plate… Likely be kegging this one tomorrow or Thursday. In the keg, it will get 2oz of dried Citra leaf to finish it off.

This one got me real excited, to say the least.

I think I'm getting over my need to do heavier, maltier beers when fall's around the corner.

Still in the mood for something hoppy, so I'll be brewing up another one of my hoppy raw kveiks in the next few days. Quick brew day, and quick turnaround. Will be using Comet and Chinook from beginning to end on this one, since I've got a lot in my freezer.

Last night I kegged my wet hop IPA brewed on Sunday… Only 3 days in the fermenter!

FFT gave me a FG of 1.011 (final ABV of 5.8%)… My hydro sample on the beer itself was at 1.016… So it was put into the keg with 2oz of leaf citra and sealed off. Will be spunding this over the next few days at the fermentation temperature and prob crash it down this weekend. I might even tap it as early as Sunday depending how it goes… 7 days exactly grain to glass, if that happens (tap needs to open up).

I will admit, this beer is HELLA bitter at this point. But also, plenty of Galaxy pellet and yeast in my sample. Day after yeast was pitched, 2.5oz of Galaxy was added along with 6oz+ of wet Chinook, for reference. So yeah, very green and harsh at this point!

Once it actually hits FG and gets cold conditioned a few days it should reduce that a bit when all that yeast/hop drop out. You can tell the flavor is nice behind all that astringent hop bitterness, though!

First time brewing solo. Second time brewing on my own system (a v3 robobrew). Just doing a simple cheap SMaSH with 10lbs of Great Western Pale Ale Malt and 3 oz of Cascade. My first brew on the robobrew (a focal banger clone) turned out ridiculously dark in color, despite tasting fine. Using this as a test run to see where I went wrong. Suspecting the first time was either oxidation or Chlorine in the tap water I used that fucked things up.

Just milled my grains and treated water for tomorrow's session. I will be brewing up a gluten free interpretation of this bad boy:

I'm excited to try out this yeast blend. Also changing up my process just a bit.
