    Biere de Garde is one of my favorite styles to mess around with. I bet it will turn out great. If you have a packet of Belle Saison or MJ M27 hanging out, pitch it once a krausen forms. Then bottle with Brett (your choice!) and wait.

    Finishing up my first year of homebrewinng with an extract version of an NE-ish IPA (light DME, wheat DME, c20, Citra and Galaxy) on New Years Eve Day. LHBS didn't have London III so I audibled to British Ale. Cheers to 2016.

    Seems to be coming an issue around these parts. I have not been able to get that at my LHBS for a couple of months. It sells out quickly and they can't seem to get more than 3 at a time.

    Emergency!!! My daughter in law sent me the news that her smoked magik (a coffee, maple syrup, smoked malt) stout was down to 2 bottles. Down to the art foundry I went and made another batch.

    I think I'll do 2 10 gal batches either Friday or Monday. I've got yeast for 10 gal of lager. Maybe German maybe Cream. Then I'll do a double batch of Dry Stout.

    Brewed my porter after work last night. Day went as smooth as can be... Used my new MW102 pH meter to check mash pH and 15min into the mash measured 5.39... At the end of the 60mins, it was at 5.35... Looks like Bru'n water is really accurate (as expected).

    Nailed my mash efficiency (76%), pre boil gravity, volumes, etc... Post boil OG was 3 points high (not complaining about that!). If all goes well, the beer should finish at an expected 5.9% ABV, ~37 IBU.

    Pitched rehydrated US05 at the end after oxygenating with pure O2. Still no activity yet 10hrs after pitching, but I expect by the time I get out of work there should be something going on.

    Now as soon as this one finishes in primary I need to brew my single hop azacca IPA to fill up my keezer (alongside my Cream Ale and this Porter).

    I am curious about brewing a black saison. How did yours turn out?
