    I have Monday off so I am going to use my new keggle mash tun on the new 3 tier. Doing 10 gallons of Lambic wort, 158*F, 5.8 pH, 3 hour boil, and then setting the kettle in the backyard underneath my Nectarine tree (that I cultured amazing yeast from earlier in the year). Then I'll transfer it to fermenters on Tuesday after work.

    Tried something new yesterday... I have a wet hopped pale that was really tasty, but didn't have the hop punch I was after (given my fresh hops didn't "soak" all the way as the weight didn't get it to sink I had in there). The keg is about half gone, so I figured why not try a keg kopping? Added 2.5oz of Belma in a paint strainer bag weighted down with a sanitized shot glass. Thankfully, no overflow when I added although it did foam up. But tasting it today? Wow! Added a beautiful punch of hop aroma. Curious how it will be in a few days, but it worked wonderfully!

    Also currently have a 3.5L starter going for a Kolsch on Tuesday.

    Brewed a Gumballhead-ish Hoppy Wheat this morning (mashed all night and hit the boil before 9) and then mashed back in around 11 on a New England DIPA version of my house IPA with Citra and Nelson, then finished that brew up while I watched my Tigers beat Wake...and I didn't even have to use my AK, today was a good day :rolling_eyes::rofl:

    Brewed my 2nd try at Domaine DuPage (biere de garde) today. Pilsen, Pale, Vienna, Munich, Melanodin and Carawheat. Scored 2oz of low AA strisselspalt hops to round it out.

    It was my first time stepping up to BIAB after previously only partial mashing. Definitely need to work on my technique as I only hit 64% eff. I'm thinking next time mashing longer and lightly squeezing the bag.

    Other than that, it went nice and smooth and having fewer things to clean is a big bonus.

    Still dry hopping the New England ipa... Just threw in some cryomosaic hops. How many ounces do you guys usually stop at per 5 gallons? Cold crash starts Thursday night kegging Sunday morning.

    My new DIPA is at 24oz total. About 12oz total for the two dry hops. Kegging soon, airlock smells of straight pineapple/orange.

    Tonight I kegged my new Pils (with Saaz and Mittelfruh). Then pulled a hydro reading of my DIPA, which is currently at 87% AA with London Ale III... Currently at 8.3% ABV. I think its finally done, though (I hope!).

    But kid you not, the hydrometer reading tastes exactly like a mix of Trillium Dialed In (which I had a can of tonight, so fresh on my mind) and Galaxy Cutting Tiles. I've loved a lot of my other NE IPA's, but this one is another level. I think its safe to say I finally nailed my Trillium IPA/DIPA profile. Complete home run with this one! It was hopped with CTZ, Mosaic, Vic Secret and Galaxy.

    Picked the last of my hops today, a first year centennial. Got 300g wet , made a hop tea and it had a distinct lime aroma and very spicey taste. Looking forward to this plant doing better next year, hopefully.

    I brewed a WC IPA yesterday. Fermenting away, first Dry Hop in a couple of days. The hardest thing about home brewing is the waiting.

    I am back from. My first GABF. Great fun, super people and beers. Now I have to make a Marshall zukof aged in coneac barrels clone.

    Last weekend I did 15 gallons of marzen. I had originally planned on 5 gallons of dunkel and 10 gallons of marzen, but with time constraints I pushed ahead with 15. Interesting time since my mash tun cooler is way too small. I mashed thick in the kettle , dumped it in the cooler, and ended up sparging a lot more than normal. My OG was only a little off though, so at least I know this is viable going forward.

    Boring compared to what a lot of you are doing but I brewed up a Hefe Saturday. I used Nick Corona's gold medal recipe from 2016. Giving off some nice smells today!

    Absolutely tremendous. The barrel ageing along with the coneac notes really pleases the senses. Good purchase!!!
