What's the largest vertical in your cellar?

    My largest vertical is North Coast Old Stock: 01, 03, 05-14.

    I still have the vertical box from Schmalz; 8 to 15, I seem to recall.

    Jewbelation 8-17, plus all three Funkys ('12-'14) and the Vertical bottle. Going to open them this Christmas for a holiday tasting.

    I had Weyerbacher Decadence through Eighteen but finally did them two months ago. All were beautiful besides Eleven. You'd think a triple IPA would have faded a little after seven years, nope.

    Question for people who build these verticals...how many do you start with, and how often do you drink them while building the rest of the vertical?

    For me it kind of depends on how long I think the beer can go for, as well as its availability, but these days I usually cellar ~6 bottles, and open one every 6 months - 1 year depending on what I think its aging potential is. A lot of beers in my cellar that I am building verticals of are really for experimentation purposes*. For instance, I havent yet determined how long I prefer to age Parabola, so I have been opening one of each of the last three vintages every six months, and have one of each of the early vintages as well (most of which I haven't tried in a few years, because I wasn't buying as many bottles to cellar back then, and the ones that I didn't open in the first 1-2 years of aging were "I'll open this one day when I think it's time" bottles). If when I open a 2012 next spring and think it is still has more aging potential, then I might keep it going a little longer, otherwise I will probably do the full 2010-15 then and see which vintages I prefer, and how long I think it can go, which will inform my cellaring of that beer in the future.

    *Not to see if they can be cellared, but to see how long, as all the beers in my cellar I have already had positive experience with in at least the 2-3 year range.

    Personally I start with five or more (especially smaller format bottles). My goal is to build an ongoing five year vertical. I try to drink an aged bottle with a fresh bottle for me this seems to be the best way to compare. Not all beers age well and this seems to be the best way for me to catch beers before they become total drain pours. Right now three years seems to be where most beers start to fall off. Some of my better agers have been KBS although five years seems to be pushing it, BCBS 2008 I thought was the end in the last tasting although 2009 was still drinking well. Fort from Dogfish aged phenomenally well 2006 was my oldest on that at eight years it was starting to show more off flavors. My next tasting will be Bigfoot back to 2010 my last '10. Also I find it best to drink at least one beer fresh, no use aging a beer you don't like.
