What's up with my brew?

    It sounds like you have taken great measures to avoid moving trub from the kettle. Do your filters catch a lot of break material? I'm wondering if all the gunk is yeast and dry hop or if it is stuff from the kettle.

    looks to me like yeast rafts clinging to the side of the jug, it happens all of the time, may drop out, but wont harm the beer. Best of luck!

    Some of the gunk is the dry hops but most of it is trub. The cheesecloth does work but as you can see, it could use some prefecting.

    I'm fine waiting another week or so to bottle, but my concern with that now is the dry hop. Are the flavors and aroma from the dry hop going to fade if I wait another week to bottle?

    Any recipe with a preponderance of wheat in the grain bill I've ever made was ready for the bottle within 14 days.

    Maybe some of the barley recipes are ready sooner than three weeks but if you're bottling by the seat of your pants...IOW no hydro-sampling no refractomomeretering (sic)...IMO it's more better to wait a few extra days.
