just started brewing, but I do enjoy wheat beers. was wondering if anyone had a good wheat beer recipes? plan to do a wheat pumpkin of some sort since tis the season coming up.
I'm really not sure pumpkin and wheat go together. Not because they will clash, rather because the spice which is really what is typically associated with a pumpkin beer, will overpower the delicate flavors of wheat. Because they don't clash, certainly you can use wheat; I just don't think you'll taste the wheat. If you want, just take any pumpkin recipe you Google and replace half or so of the base malt with wheat. If extra brewing extract just get about half, but no need to be precise.
In addition to the above post, pumpkin is a difficult flavor to get into a beer, and typically the pumpkin pie spices way overwhelm the pumpkin. Whatever recipe you choose, I'd skip messing with trying to use pumpkin in it. Probably most commercial pumpkin ales skip using the pumpkin too.
What size batches are you brewing? Remember, if it's a 5 gal batch, it will be 5 times as hard to choke it down as a 1 gal batch ...I'd get a Hefe, Wit, or American Wheat under my belt first before dicking with a pumpkin beer...imho.
If you are new to brewing or just short on time, I think you can make enjoyable German style wheat beer or American wheat beers using dry wheat malt extract and about 1-2 oz of German noble hops or something more American. Most homebrew shops will sell a kit. For German style, I prefer the liquid yeasts. For American style, US-05 will do. As for pumpkin, I'm a proponent of keeping pumpkins in pie, so probably will not be able to help with that.
I think it’s a cool idea I’d use noble hops straight wheat and pumpkin purée with no spices because spiced beers piss me off
50/50 wheat and barque pils malts Hallertauer for bittering and a late addition. Any neutral yeast strain or hefe strain. I prefer weihenstephaner strain, or chico. Or maybe use a clean lager strain to really let the wheat shine. Wyeast bock is my personal go to for everything clean andGerman. .
